The latter suggestion that the low-end MBP start with 16GB and the Pro chip is a good one... although that probably bumps the bottom price point as well.

The 8GB size/one monitor limit probably hits on the ability of the M3's processors to drive two Apple 5K Studio Monitors. (They are, after all, what Apple sells.)
